This dinner was one of only 2 or 3 of it's kind held in Canada. Distinguished by local corporate folks, who donated heavily to support a local regiment, mingling with senior military officers, while being splendidly entertained by marching bands and Michael Burgess. Food, wine and service were all pretty special as well.

On November 11 we served a Military Banquet at Parade Square,Foote Armoury. At noon the bbq staff arrived and began the setup. Approximately 300 guests starting arriving at 6:30 and were served an array of hor's d'oeuvres and there was a bar service.They were served on the main floor where an ice sculpure displayed the cold items. There was pork dim sum,prosciutto wrapped asparagus spears,bacon wrapped scallops,California rolls, sushi,mushroom caps stuffed w/ crab meat & spices,apple, pear, blueberry & raspberry mini pastries,barbecued Denninger sausage chunks w/ red peppers on a bed of Romaine lettuce .

There was also a salad/fish combo with mandarin orange,walnuts, red onion, romaine & radicchio & smoked salmon, shaved onion, capers, surrounded by 3 very large shrimp. The shrimp was served in a champagne glass sitting on salad & smoked salmon on a plate. At 7:55 the main course was served. It was beef tenderloin au jus,potatoes parisienne oil, salt, pepper,sweet onions,baked with breadcrumbs oil, sage, rosemary & parsley.Grilled red peppers, cut vertically, laid flat & filled with cherry tomatoes, currents & parmesan cheese and crusty French baguette with unsalted butter.The plate decoration was beautiful.

At 9:25 the desert was served. It was delicious. Apple blossoms that were warmed with sauce and whipped cream. There was also Port that was supplied by Officer's Mess. And of course, coffe and tea.

The band was served an assortment of cold cuts,cheeses, and rolls.Cut celery, carrots & dip. They also had cold drinks and chocolate chip cookies.

Around 11pm the bbq staff tidied up and left. We had a very enjoyable evening, incredible food, great entertainment and the client was very pleased with the event.
